Loaded Baked Potato Flats

Ingredients: Four Progressive Farms Russet Potatoes, scrubbed clean
Garlic Herb Butter
• 1/4 cup Butter, melted • 2 tbsp Parsley or Rosemary, chopped• 4 garlic cloves, minced• 1 tsp Italian seasoning• 1/2 tsp paprika• 1/4 tsp black pepper• Sea salt, to taste
Suggested Topping Combinations
• Sliced Progressive Farms Jalapeno and melted Cheddar Cheese • Roasted Progressive Farms Asparagus with arugula, and sliced tomato• Progressive Farms Cabbage slaw• Roasted Progressive Farms Brussels Sprouts• Everything potato with melted cheddar cheese, bacon pieces and sour cream• Grilled Nature’s Bounty Organic Onions
Instructions
1. Pre-heat the oven to 400°F2. Cut ends of the potatoes then lengthwise into 1/4 – 1/2 inch slices. Keep thin for crispy potatoes. 3. Score the potato horizontally (sideways) every 1/4 inch or so. Flip slice over and repeat the process.4. Whisk the garlic herb butter ingredients in a small bowl.5. To break down the starch and keep the potatoes from browning, keep in cold water after cutting. This will crisp potatoes when baked.6. Arrange the scored potato slices on a parchment-lined baking sheet. Brush the garlic herb butter onto both sides of the potatoes.7. Place potatoes in oven for about 40 mins, flipping halfway through. Once done the potatoes will have crispy edges and a lightly brown center.8. Allow the potato slices to cool for 5 minutes. Add your favorite toppings and enjoy!
